🍝Artisanal fresh bigoli pasta with white bolognese sauce!!!🍝
Bigoli or bigoi are a fresh pasta of Venetian origin and very common in Lombardy: the main characteristics of this large spaghetti are roughness and porosity, which allow it to retain sauces and condiments in an excellent manner.
The term "bigolo" derives from bigat, which in the regional dialect means "caterpillar", alluding to the shape of this singular variety of pasta.
Even today some Venetian families have at home the ancient tool with which, in the country houses, this pasta was prepared: the bigolaro,
a press with a rough bronze plate, which was fixed to the table, filled with the dough and operated energetically by hand.
